The Original Cajuns And How They Developed Their Style of Cooking
Today, Cajun food is very popular throughout the United States. However, as with many iconic food traditions, Cajun cooking began centuries ago. It started with a hardy and thrifty people just looking to survive off the land.
It all began in the 1600s. Lured by the abundance of codfish, French colonists settled in Newfoundland, Canada. After draining the marshland using dikes, they also farmed the rich, fertile soil. They grew beets, carrots, parsnips, onions, chives, shallots, peas, and corn as well as hay, flax, and hemp. These colonists lived in relative peace, thriving until 1755 when the English government expelled them.
A great number of these exiles made their way to Louisiana settling in the swampy areas west of New Orleans. These exiles, known as Cajuns, found a very different climate than in the North. Some of their favorite crops did not grow well in the hot, steamy weather of Louisiana. So, they made substitutions as they settled and adapted to their new home.
Many rivers wind their way through Louisiana including the mighty Mississippi River. Other bodies of water such as lagoons, lakes, and bayous dot the landscape. Populating these areas are a wide diversity of fish and other aquatic life. The Cajuns quickly learned to incorporate the local wildlife into their traditional dishes.
Rice, too, thrived in the hot sticky climate. Areas that were too swampy for growing other staples became farmland for rice. Thus, this became the grain of choice. Jambalaya, étouffée, and dirty rice are some famous Cajun meals incorporating rice.
What Makes Cajun Food Different?
When Cajun style food exploded into popularity in the 1980s, it spawned many imitations. Some of these imitations were hot and spicy rather than the traditional highly-seasoned meals of the Cajun. So, fifteen years ago, we set out on a journey to find the authentic taste of Louisiana. After traveling extensively, we brought back the best recipes here to North Carolina.
Cajuns descend from French colonists and so their cooking has its roots steeped in French tradition. Many French dishes begin with mirepoix, sautéed onion, celery, and carrots. When the French arrived in Louisiana, they found carrots too difficult to grow in the area. So, they replaced bell peppers for the carrots resulting in the holy trinity of Cajun cooking.
Roux, a thickening agent made with butter and flour, also had its birth in France. Thrifty Cajuns substituted lard for butter finding it lent a savory, sweet flavor to their dishes. The basis for many meals, you’ll find roux in étouffée, jambalaya, and gumbo.
Typically, the main ingredient in Cajun dishes is some type of seafood. Many different types of seafood are abundant in the Gulf of Mexico, rivers, and bayous of Louisiana. Cajuns were a hardy and frugal people, cooking up whatever they could catch. This includes crawfish, crab, lobster, clams, and mussels. It is the combination of seasoning, cooking methods, and ingredients that set Cajun cooking apart. And it is this authentic taste that we serve to you at Crazy Crab Seafood & Grill.

We love seafood, especially Cajun seafood. But finding authentic Cajun dishes outside of Louisiana is a rarity. That’s why we traveled extensively for 15 years throughout Louisiana and the southeastern coastal areas from Florida up to the Carolinas. After picking our favorite recipes, we tested and perfected them in our kitchens. Then, we opened our casual dining restaurants in Winston-Salem and Greensboro.
When you dine with us, you’ll experience a fun, family-friendly atmosphere. Nautical décor and lighting create a shoreline theme that will make you feel like you’re at the beach. And our customer-service-oriented staff strives to provide a memorable dining experience. Our menu includes Cajun dishes like seafood boils and jambalaya. But we also serve many different fried seafood platters as well as wings and hamburgers. We understand that there may be some in your family that prefer beef or chicken to seafood.
Our Seafood Boils Are the Triad’s Best
Seafood boils are the Cajuns’ answer to stew. You simmer all ingredients in one big pot for a hearty, delicious meal. Undoubtedly, crawfish are the most popular, but boils can include a variety of seafood.
In the tradition of Cajun cooking, we start your boil with corn and potato. If you wish, you can add sausage and egg. We have 7 different seafood combinations to choose from or build your own. Seafood choices include King, Snow, Blue, and Dungeness Crab legs, lobster tail, shrimp, oysters, crawfish, mussels, and clams.
What’s your favorite flavor? Garlic, lemon pepper, or Cajun seasoning? Can’t decide? We’ll mix all three for a truly unique flavor. And because we know everyone has a different heat tolerance, we offer several different spice levels.

Our Menu Also Includes Many Fried Platters
Frying food is an art. The success of frying depends on your choice of oil, heating it to the correct temperature, and cooking time. Get one thing wrong and you’re likely to be disappointed in your meal. At Crazy Crab Seafood & Grill, we’ve learned the secrets of successful frying. All our fried fish is light, crisp, and delicious. And we serve several different kinds.
When you browse our menu, you’ll notice we serve both fried shrimp and popcorn shrimp. What’s the difference? We bread and deep fry both. However, fried shrimp is larger and has the tail intact. Popcorn shrimp is the smallest of sizes with the tail removed.
We also serve other fried seafood platters such as whiting, oysters, and catfish. Of course, what southern fried fish platter is complete without hush puppies? Our delectable cornmeal dough fries up crispy on the outside and soft and chewy on the inside.
What About My Picky Eater?
While we’re crazy about seafood, we understand that not everyone loves it as much as we do. But we want to be a restaurant that your whole family can enjoy. That’s why we serve other dishes too.
Big, thick, juicy hamburgers are also on the menu. If you like yours dripping with hot, melted cheese, we have several. Choose from a classic with American cheese or topped with turkey bacon. We also serve a tantalizing mushroom and Swiss cheese burger. And for the more exotic tastes, we serve a hamburger with bleu cheese crumbles. For those who like a little spice, we also have our Bourbon BBQ burger. Served with lettuce, tomato, and mayo, our crispy French fries complete your meal.
Chicken wings are another of our specialties. We serve them naked, breaded, or grilled. And because freezing chicken changes the flavor, we only use fresh wings. Additionally, we understand that customers have different sized appetites. That’s why we have several different sized portions.
Natives of Louisiana Also Have a Sweet Tooth
While Louisiana is known for its Cajun-flavored dishes, it’s also home to some delicious confections too. In fact, the beignet, a sweet pastry made from fried dough, is the official state doughnut. Louisiana is also known for other delicious desserts like Bananas Foster.
So, which of these famous Louisiana desserts do we serve? Of course, we sell beignets covered in powdered sugar with chocolate dipping sauce. And we have our version of Bananas Foster cheesecake.
