For almost 200 years, the Cajun people lived relatively unknown outside of New Orleans. It wasn’t until the 1980s that the world discovered their exceptional blend of spices and seafood. However, the Cajun style of cooking we enjoy today started centuries ago, far away in another country. Back in the early 1600s, a steady stream of French people settled in the Nova Scotia area of Canada. In the following years, rule continually switched between the French and English. For most of this time, these French colonists, Acadians, maintained neutrality to keep the peace. However, escalating tensions between the French and English demanded an oath of allegiance to the King of England. This pledge included renouncing the Acadians’ religion and adopting the king’s religion. When the Acadians refused, the English government seized farms, burned villages, and expelled the colonists.
The English government relocated many Acadians to France, the Caribbean, and along America’s east coast. Many of the exiles were unhappy and moved on to southern Louisiana, finding safety in Spanish rule. Settling West of New Orleans in the rural bayous, they thrived in relative isolation. They lived off the land, adapting their traditional dishes and using the staples on hand.
